Raw Mediterranean Pizza on Zucchini-Broccoli Crust with Herbed Pine Nut Macadamia Cheese

With an unreal explosion of flavor, this amazing raw pizza will tempt you to make it every week.



Step 1

Note: This recipe requires parts to be prepared a day ahead of serving. Equipment required: Dehydrator, trays and Teflex lining, food processor.


  • 1 cup Flax Seeds, ground
  • 2 cups Zucchini, roughly chopped
  • 2 cups Broccoli Florettes, chopped
  • 2 tablespoons Fresh Squeezed Lemon Juice
  • 2 tablespoons Fresh Herbs, such as basil, Italian flat leaf parsley, and/ or sage
  • 2 tablespoons Nama Shoyu
  • 14 teaspoon Salt
  • 12 teaspoon Freshly Ground Black Pepper
  • 18 teaspoon Cayenne Pepper
  • 2 tablespoons Nutritional Yeast
  • 14 cup Filtered Water, (if needed)

Step 2

PIZZA CRUST: Place ground flax seeds, zucchini, broccoli, lemon juice, fresh herbs, nama shoyu, salt, black pepper, cayenne, and nutritional yeast in a food processor fitted with an S blade. Process on high speed for 20-30 seconds, adding water only if necessary to form a chunky but unified batter.

Step 3

Scoop batter onto 2 teflex lined dehydrator trays in 1/2 cup portions and flatten with spatula or back of spoon. Dehydrate at 110 F for 15 to 18 hours, flipping over midway through and removing teflex.


  • 1 cup Pine Nuts, soaked for at least 2 hours
  • 2 cups Raw Macadamia Nuts, soaked at least 2 hours

Step 4

CHEESE: Drain and rinse pine nuts and macadamia nuts. Place nuts in a food processor, and blend on high speed for 10 seconds.


  • 1 12 teaspoons Fresh Parsley
  • 1 12 teaspoons Fresh Rosemary
  • 1 teaspoon Fresh Thyme
  • 12 teaspoon Salt
  • 12 teaspoon Freshly Ground Black Pepper
  • 2 tablespoons Nutritional Yeast
  • 34 cup Filtered Water, as needed
  • 1 teaspoon Apple Cider Vinegar

Step 5

Add rosemary, parsley, thyme, nutritional yeast, salt, pepper, and vinegar. Blend on high speed for 10-15 seconds, adding water as needed to get a moist but crumbly consistency.


  • 1 large Tomato, sliced thin
  • 2 tablespoons Balsamic Vinegar

Step 6

PIZZA TOPPINGS: Marinate tomato slices in balsamic vinegar for 5 minutes while you gather other ingredients.


  • 12 bunch Fresh Basil, stems removed

Step 7

Arrange pizza crusts on 4 plates. Layer 2 to 4 basil leaves on top of each crust. Follow with marinated tomato slices.


  • 14 cup Fresh Shiitake Mushrooms, sliced
  • 2 tablespoons Fresh Parsley, minced

Step 8

Scoop about 2 tablespoons Herbed Pine Nut Macadamia Cheese onto each, sprinkle with mushrooms. Garnish with parsley and serve immediately.
