Classic Red Beans and Rice with sausage or ham + ham bone for flavor.

Directions

Ingredients

  • 1 pound Kidney Beans, dry

Step 1

Soak beans for 24 hrs, discard water.

Ingredients

  • 1 teaspoon Salt
  • 1 Vidalia Onion, diced
  • 1 Ham Bone, optional but it's WAY better
  • 1 pound Smoked Sausage
  • 12 teaspoon Hot Sauce
  • 6 cups Water
  • 1 teaspoon Worcestershire Sauce
  • 2 Dried Whole Bay Leaves
  • 1 tablespoon Minced Garlic

Step 2

Add all ingredients to large bowl, and bring to a boil slowly or beans will stick to bottom of pan and burn. Feel free to spice it up at this step with whatever you like! (Tabasco works well in this dish, go overboard with something spicier and less vinegar to make it hotter)
 

Step 3

Reduce heat to low and cook covered until beans are to desired consistency. Stir every 20 minutes and add water if beans are not tender. If it's thin like soup, mash a few beans and uncover to thicken. Stir more frequently towards end of cook time (est 3+ hours).

Ingredients

  • 1 cup White Rice, (makes about 3)

Step 4

Prepare rice like it were pasta. Bring water to & keep at a boil and cook for 20 minutes. Taste test for consistency. Rice should not stick. Pour rice into colander to drain water.
 

Step 5

Serve with 1:1 ratio of rice to red beans.
