Rhubarb-Ginger Cooler

Rhubarb-Ginger Cooler

  • 12 cup Sugar
  • 12 Vanilla Bean Pod
  • 2 cups Water
  • 5 Rhubarb, ribs aka stalks

Step 1

In a saucepan over medium-high heat, combine the rhubarb, sugar, vanilla pod, and water.

Step 2

Cover and bring to a boil, then reduce the heat to medium-low, and simmer for 10 minutes.

Step 3

Remove from heat, and let cool. Remove and discard the vanilla pod.


  • 14 cup Fresh Ginger, chopped

Step 4

Pour the cooled rhubarb mixture and the ginger into a blender, and process until smooth.

Step 5

Strain the puree through a fine-mesh sieve, and set aside.


  • Ice Cubes
  • Ginger Ale, chilled

Step 6

Fill glasses with ice, and pour in the rhubarb-ginger puree. Top with ginger ale, and serve.
