Ricotta Pancakes

Directions

Ingredients

  • 1 cup Fat-Free Ricotta Cheese
  • 34 cup Flour
  • 12 teaspoon Baking Powder
  • 1 12 tablespoons Sugar, use more or less sugar depending on how sweet you like your pancakes
  • 1 pinch Salt
  • 34 cup Butter
  • 3 Eggs, separated
  • 12 teaspoon Vanilla Extract
  • 1 Lemon Zest, zest one lemon

Step 1

mix everything except the eggs whites
 

Step 2

Whisk the eggs whites until the form soft peaks. Using a spatula, fold the whites into the batter one third at a time.
 

Step 3

Use a 1/3 cup measuring cup to make equal-sized pancakes. Serve hot.
