Roast Broccoli with Lemon and Pine Nuts

Broccoli roasted in the oven, light tasting with lemon and lemon zest.



  • 1 pound Broccoli Florettes
  • 2 tablespoons Extra Virgin Olive Oil
  • 12 teaspoon Fine Sea Salt, to taste
  • 12 teaspoon Fine Ground Black Pepper, to taste

Step 1

Toss broccoli in oil, salt and pepper until coated.

Step 2

Roast broccoli on a roasting pan or cookie sheet at 450-degrees. Turn periodically.


  • 2 tablespoons Pine Nuts, toasted

Step 3

Toast pine nuts in a small skillet, dry, being careful not to overcook.


  • 2 tablespoons Unsalted Butter
  • 1 teaspoon Garlic, minced
  • 12 teaspoon Lemon Zest
  • 2 tablespoons Fresh Squeezed Lemon Juice

Step 4

Melt butter with garlic and lemon zest. Cool slightly and whisk in lemon juice.

Step 5

Toss broccoli and lemon sauce in serving bowl with pine nuts.
