Roasted Petrale Sole with tomatoes

Great summer dish



  • 2 cloves Garlic, whole cloves
  • 3 tablespoons Balsamic Vinegar
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 pound Grape Tomato, Sliced
  • 5 leaves Fresh Basil

Step 1

Slice and arrange tomatoes over fish in shallow casserole dish. Drizzle with sauce (oil, vinegar, garlic, basil). Baste.

Step 2

Bake tomatoes for 20 minutes


  • 1 pound Petrale Sole

Step 3

Add sole and bake for another 10 minutes on top of tomatoes.
