*Roasted Yellow Squash

Step 1

Preheat oven to 400.


  • 2 Yellow Zucchini Squash, peeled and thinly sliced
  • 14 Red Onion, thinly sliced
  • pinch Salt
  • pinch Ground Black Pepper
  • 1 tablespoon Extra Virgin Olive Oil

Step 2

Layer squash and onion in a Pam sprayed 9 X 13 pan. Drizzle with olive oil and pinch of pepper and salt. Bake for 25 minutes.
