  • 4 Topside Beef Slices, sometimes sold as "beef for roladen"
  • 4 teaspoons Dijon Mustard
  • 4 dashes Pepper
  • 4 dashes Salt
  • 4 dashes Paprika
  • 4 tablespoons Bacon Crumbles
  • 4 tablespoons Onion, diced

Step 1

Layout slices of Beef. Spread mustard, sprinkle with Pepper, Salt & Paprika. Sprinkle Bacon crumbles and diced onion.

Step 2

Roll each slice of beef and secure with string or roladen clamp.


  • 4 Onions, diced

Step 3

In dutch oven type pot, spread a thin layer of oil. Add diced onions and Roladen. Brown Roladen, turning frequently.


  • 1 Bay Leaf

Step 4

When Roladen are browned, add just enough water or beef broth to cover. Add bay leaf. and simmer on low for 4-5 hours.

Step 5

Reserve cooking water for sauce: Season to taste with additional Salt, Pepper, and Paprika. Use flour/water or corn starch/water to thicken to desired consistency. Serve over egg noodles, spaetzle or dumplings. (don't forget to remove the string or clamps)
