Rosemary Pesto

A pungent pesto that makes an effective chimichurri for lamb.



  • 1 12 cups Fresh Parsley, de-stemmed, washed and dried
  • 13 cup Fresh Rosemary, de-stemmed
  • 2 cloves Garlic, peeled and crushed
  • 12 cup Walnut Pieces

Step 1

In food processor, chop herbs, garlic and walnuts.


  • 12 cup Olive Oil

Step 2

Using short pulses, add olive oil.


  • 12 cup Parmesan Cheese, fresh grated

Step 3

Using short pulses, add cheese.


  • Salt, to taste
  • Freshly Ground Black Pepper, to taste

Step 4

Test and season to taste.
