Rucola Soup with Fresh Herbs

Directions

Ingredients

  • 3 whole Spring Onion, Sliced
  • 75 grams Rucola
  • 15 grams Fresh Basil
  • 30 grams Fresh Parsley
  • 1 teaspoon Fresh Thyme
  • 1 liter Bouillon, of garden herbs
  • 2 tablespoons Lemon Juice

Step 1

Stir all ingredients through the bouillon. Boil this for 3 minutes. Mash it with a hand blender to become a smooth soup. Warm up the soup and add the lemon juice and a bit of pepper and salt. Serve the soup in soup cups.
