Salad in a Blanket |

I'm into week two of having three kids, at three different schools! Let's just say, ALL my meals have been 'fast fix' ones! This was one of my favorites. It incorporates a lot of healthy fresh veggies, and you can use whatever leftover meat and beans you have on hand.
Take a tortilla and place it on your plate. I usually use whole wheat or corn, but we ran out after we ate them for dinner! SO... I had some regular ones I used for our "photo shoot!"

Step 1
Place all this “goodness” on your small tortilla.

Drizzle with a little salad dressing of your choice, or just squirt some lime and add some salsa.

Step 3
Eat this as a “salad” at the beginning, then, fold into a taco to finish off the rest. Salad in a Blanket.
