Salad of Greens, Cherries, Prosciutto and Goat Cheese

A delicious and distinctive salad that packs some flavor. Take care when pairing this salad with a main course as it is full of unique and strong tastes. It works best (for me) alongside duck or beef.

Directions

Ingredients

  • 1 12 cups Bing Cherries, pitted
  • 13 cup Balsamic Vinegar

Step 1

In a small saucepan, combine cherries with balsamic vinegar. Bring to a boil over high heat, then remove and let them cool completely, about 15 minutes.

Ingredients

  • 10 cups Mixed Baby Lettuce Greens, Try arugula, watercress or mizuna
  • 1 Scallion, Thinly sliced
  • 1 pinch Kosher Salt, to taste
  • 1 pinch Ground Black Pepper, freshly ground, to taste

Step 2

Put greens and onion in a large bowl. Season to taste with salt and pepper.

Ingredients

  • 14 cup Extra Virgin Olive Oil

Step 3

Add olive oil and cherry mixture from pan. Toss well. I repeat, toss well.

Ingredients

  • 6 slices Prosciutto, halved lenghtwise
  • 5 ounces Goat Cheese, crumbled

Step 4

Divide evenly among salad plates and top with prosciutto and crumbled goat cheese. Serve immediately.
