A delicious and distinctive salad that packs some flavor. Take care when pairing this salad with a main course as it is full of unique and strong tastes. It works best (for me) alongside duck or beef.

Ingredients
Step 1
In a small saucepan, combine cherries with balsamic vinegar. Bring to a boil over high heat, then remove and let them cool completely, about 15 minutes.

Put greens and onion in a large bowl. Season to taste with salt and pepper.

Add olive oil and cherry mixture from pan. Toss well. I repeat, toss well.

Divide evenly among salad plates and top with prosciutto and crumbled goat cheese. Serve immediately.
