Salmon Cakes

Delicious salmon cakes that taste very similar to crab cakes and can be baked instead of fried. Makes roughly 12 cakes. Can be made smaller and served as a party appetizer.

Directions

 

Step 1

Preheat the oven to 350 degrees F.

Ingredients

  • Kosher Salt
  • Ground Black Pepper
  • 1 12 pounds Salmon Fillet

Step 2

Place the salmon on a foil-lined sheet pan, skin side down. Sprinkle with salt and pepper. Roast for 15 to 20 minutes, until just cooked through (145 degrees or until opaque and flakes easily with a fork).
 

Step 3

Remove from the oven and cover tightly with aluminum foil. Allow to rest for 10 minutes and refrigerate until cold.

Ingredients

  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter
  • 1 cup Red Onion, finely diced
  • 2 14 cups Celery, small-dice (about 4 stalks)
  • 34 cup Red Bell Pepper, small-dice
  • 34 cup Yellow Bell Pepper, small-dice
  • 6 tablespoons Fresh Parsley, chopped
  • 1 12 tablespoons Capers, drained
  • 14 teaspoon Tabasco Sauce
  • 34 teaspoon Worcestershire Sauce
  • 2 14 teaspoons Old Bay Seasoning
  • 34 teaspoon Kosher Salt
  • 34 teaspoon Ground Black Pepper

Step 4

Meanwhile, place 2 tablespoons of butter, 2 tablespoons olive oil, the onion, celery, red and yellow bell peppers, parsley, capers, hot sauce, Worcestershire sauce, Old Bay seasoning, salt, and pepper in a large saute pan over medium-low heat and cook until the vegetables are soft, approximately 15 to 20 minutes.
 

Step 5

Cool to room temperature.
 

Step 6

Flake the chilled salmon into a large bowl.

Ingredients

  • 34 cup Mayonnaise, light is fine
  • 3 large Eggs, beaten
  • 1 tablespoon Dijon Mustard

Step 7

In a small bowl combine the mayonnaise, mustard and eggs. Add to bowl with flaked salmon.

Ingredients

  • 1 12 cups Panko Bread Crumbs

Step 8

Add the panko crumbs and cooled vegetable mixture to the bowl and mix well. Cover and chill in the refrigerator for 30 minutes.
 

Step 9

Preheat oven to 400 degrees. Line a baking sheet with foil and spray with cooking spray. Using a 1/2 cup (may have been 1/3 cup) measuring cup, form mixture into patties and place on a baking sheet.
 

Step 10

Bake about 10 to 12 minutes on each side, or until golden brown.
 

Step 11

To Fry Instead of Bake: Heat 2 tablespoons butter and 2 tablespoons olive oil in a large, non-stick saute pan over medium heat. In batches, add the salmon cakes and fry for 3 to 4 minutes on each side, until browned. Drain on paper towels; keep them warm in a preheated 250 degree F oven and serve hot.
