Salmon With Cucumber Relish

  • 2 Cucumbers, peeled, seeded, cut into 1/4" cubes
  • 12 Red Bell Pepper, seeded and chopped into 1/4" pieces
  • 14 cup Fresh Cilantro, roughly chopped
  • 2 Avocados, peeled, pitted, cut into 1/4" cubes
  • Juice of 2 Limes
  • 12 Jalapeno Pepper, seeded & chopped
  • 1 clove Garlic, minced
  • 1 tablespoon Apple Cider Vinegar
  • 1 Round Tomato, chopped into 1/4" cubes

Step 1

Combine relish ingredients and toss gently; set aside.


  • 4 Salmon Fillets, 6 oz each
  • Celtic Sea Salt, to taste
  • Freshly Ground Black Pepper, to taste
  • 2 tablespoons Olive Oil

Step 2

Season salmon steaks with salt & pepper. Heat oil in a skillet and sear salmon for 4 minutes on each side.


  • 2 cups Arugula
  • 2 cups Spinach Leaves

Step 3

To serve, place a mound of spinach and arugula in the center of each of 4 plates. Top with salmon, and then relish.
