Santa Fe Chorizo Burger

Beef and chorizo make this burger nice and spicy. Top with the simple chile-cilantro sauce in step 2, or just go simple! Add some of your favorite toppings, like sliced avocados, Monterey Jack cheese, and roasted red peppers.

Directions

Ingredients

  • 1 pound Ground Beef, Angus
  • 1 pound Chorizo, casing removed
  • 1 tablespoon Minced Garlic
  • 1 handful Fresh Parsley, chopped
  • Salt and Pepper, to taste

Step 1

Mix together, do not over-handle meat. Make into 4 - 6 patties. Grill over medium-high until chorizo is cooked through.

Ingredients

  • 12 cup Mayonnaise
  • 14 cup Fresh Cilantro, chopped
  • 2 tablespoons Green Chile Pepper, canned, diced
  • 1 Lime, juiced
  • Kosher Salt, to taste

Step 2

Mix together.

Ingredients

  • 2 Avocados, sliced
  • slice Monterey Jack Cheese, per burger
  • 2 Sweet Red Peppers, roasted, peeled and sliced
  • Buns, per burger

Step 3

Assemble as demonstrated in the photo. We felt the sauce was good, but not entirely necessary because these burgers were so juicy and packed with flavor.
