Sausage Potato Soup

This is definitely a healthier version of your typical potato soup. The balsamic vinegar and vanilla give it a different twist! It's our family favorite after trying recipe after recipe of potato soup. Enjoy!



  • 6 cups Chicken Stock
  • 11 small Red Potato, or 5-6 medium sized white/gold potatoes, peel and cut into 1" cubes
  • 1 medium Onion, chopped

Step 1

Bring chicken stock to a boil in a large pan. Add potatoes and onions. Cook until potatoes are tender.


  • 1 pound Bulk Pork Sausage

Step 2

Meanwhile, brown sausage in a separate pan. Add the cooked sausage to the potatoes and stock.


  • 1 cup Greek Yogurt
  • Ground Black Pepper
  • 1 12 teaspoons Vanilla Extract
  • 2 teaspoons Balsamic Vinegar

Step 3

Add Greek yogurt. Add the vanilla and balsamic vinegar right before serving. Add ground pepper to taste.
