Sauteed Asparagus and Pancetta |

This is fast, easy, and only half-decadent. After all, Pancetta is Italian-style bacon, and everything goes better with bacon.

Step 1
Ask for your pancetta cut thick--about 3/8". Dice that slice into 3/8" cubes.

Break bottoms off asparagus stalks. Then cut them into 1-1.5" lengths.

Step 3
Add pancetta cubes to stainless skillet and heat to high heat, stirring or tossing pancetta frequently until it's lightly browned. Add asparagus and continue tossing and stirring. Season with salt and pepper (I think this tastes great when bold with the black pepper). Reduce heat to medium and stir until asparagus is not quite soft and remains bright. Serve immediately.
