Good way to use up leftover ham. Reheats in microwave really well without sauce separating.

Step 1

Preheat oven to 350 degrees F.

  • 12 cup Unsalted Butter
  • 12 cup All-Purpose Flour
  • 1 12 teaspoons Kosher Salt
  • 12 teaspoon Ground Black Pepper

Step 2

Melt butter in large sauce pan over medium-low heat; whisk in flour, salt, and pepper. Cook, stirring constantly, for about 1 minute.

  • 3 cups Milk, warmed in the microwave (helps to make sauce thicken faster in the next step)

Step 3

Remove from heat and gradually whisk in milk.

Step 4

Return to heat; cook, stirring constantly until thickened and bubbly.

  • 3 cups Cooked Ham, diced
  • 2 cups Onion, chopped
  • 12 cup Sharp Cheddar, shredded

Step 5

Fold in ham, onions, and cheese.

  • 5 cups Potato, scrubbed and sliced about 1/4-inch thick

Step 6

Place potato slices in a large bowl. Pour ham and cheese sauce over potatoes. Stir gently to combine, separating potato slices if stuck together.

Step 7

Spray a 9x13-inch baking dish with cooking spray. Move potato mixture to baking dish; cover with foil. Note: You may also want to place a foil-lined baking sheet on the oven rack below to catch any spills should it bubble over.

Step 8

Bake for 45 minutes.

Step 9

Uncover and continue to bake for 45 minutes more. Potatoes should be soft and top lightly brown. If they start to brown too much before being cooked through, tent with foil.

Step 10

Let stand for 10 minutes before serving.
