Scotch Eggs

Scotch Eggs

Soft-boiled eggs are tricky. Most recently, I got perfect soft-boiled eggs by putting 8 eggs into a rolling boil for 7 minutes, then into an ice bath.



  • 8 Eggs, soft-boiled
  • 1 pound Italian Sausage

Step 1

Put a thin coating of sausage around the eggs. Be sure sausage is cold when this is done.


  • 34 cup Flour
  • 1 12 cups Panko Bread Crumbs
  • 2 large Egg
  • Salt and Pepper, to taste

Step 2

In one bowl, add the flour and season with salt and pepper, in another bowl, add the bread crumbs, and in a third bowl, whisk the eggs. Dip the sausage-wrapped eggs into the flour, then the eggs, then the breadcrumbs. Refrigerate until oil is heated if not frying right away.


  • 12 cup Mayonnaise
  • 13 cup Maple Syrup
  • 2 teaspoons Canned Chipotle Peppers in Adobo Sauce, minced

Step 3

Combine mayonnaise, maple syrup, and chipotle peppers and serve in individual ramakens.


  • Canola Oil

Step 4

Heat oil in a deep cast-iron pan or deep fryer to 350 degrees. Fry eggs in oil for 5 minutes, or until they have turned a golden brown color.
