Sea Bass With Swiss Chard & Red Pepper Sauce

Complement this dish with steamed broccoli and a green salad.



  • 2 cloves Garlic, minced
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Fresh Mint, chopped
  • 1 Round Tomato
  • 2 Red Bell Peppers

Step 1

Puree sauce ingredients in a blender or food processor.


  • 2 tablespoons Olive Oil
  • 4 Sea Bass Fillets, 6 oz each
  • Celtic Sea Salt, to taste
  • Freshly Ground Black Pepper, to taste

Step 2

Heat oil in a large skillet over medium heat. Season fish with salt & pepper. Cook in oil until browned on one side.


  • 4 cups Swiss Chard, chopped

Step 3

Turn fish over in skillet; add chard and cook another 3 minutes until fish is cooked and chard is wilted. Serve fish on a bed of chard and top with red pepper sauce. Serve immediately.
