Directions

 

Step 1

Preheat the oven to 350

Ingredients

  • 1 tablespoon Extra Virgin Olive Oil
  • 1 medium Eggplant
  • 2 cups Fresh Marinara Sauce

Step 2

Cut the eggplant into small dices. In a 12-inch cast iron skillet, saute eggplant with olive oil until it breaks down. Add marinara sauce - enough to cover - and let simmer until it combines to form a ragu

Ingredients

  • 8 Eggs

Step 3

While the ragu is simmering, add each egg and allow to set.
 

Step 4

Move skillet to the oven and allow to bake

Ingredients

  • 1 loaf Ciabatta Bread

Step 5

slice the ciabatta bread and brush with olive oil and grill.
 

Step 6

Remove skillet from oven once eggs are set but the yokes are still runny. Serve with grilled ciabatta bread
