Shrimp And Zucchini Stir Fry

  • 2 tablespoons Olive Oil, divided
  • 1 pound Medium Shrimp, shelled and deveined
  • 18 teaspoon Black Pepper
  • 2 tablespoons Maple Syrup, divided

Step 1

In large skillet, heat 1 tablespoon oil. Add shrimp, sprinkle with pepper. Cook 2 minutes or until almost opaque throughout, stirring occasionally. Add 1 tablespoon maple syrup. Cook 1 minute or until shrimp are opaque throughout. With slotted spoon, transfer to medium bowl.


  • 1 pound Zucchini, thinly sliced and halved
  • 2 tablespoons Soy Sauce, divided

Step 2

In same skillet, add zucchini; cook 2 minutes, stirring occasionally. Add remaining 1 tablespoon maple syrup and 1/2 teaspoon soy sauce. Add 2 tablespoons water if pan is dry. Cook 4-6 minutes or until zucchini is tender, stirring and scraping up any browned bits. Transfer zucchini and any juices to bowl with shrimp.


  • 1 bunch Green Onion, thinly sliced
  • 1 teaspoon Ground Ginger
  • 4 cups Brown Rice, cooked
  • 18 teaspoon Salt

Step 3

In same skillet, add green onions, ginger and remaining 1 tablespoon oil. Reduce heat to medium. Cook 1 minute, stirring. Add rice, remaining 1 1/2 teaspoons soy sauce and salt. Cook 3 minutes or until rice is hot, stirring constantly. Serve rice with shrimp.
