Shrimp Bruschetta

"This is a great garlicky bruschetta recipe. Serve it on slices of French bread. It's a wonderful accompaniment to tomato pastas." Now with shrimp!

Directions

 

Step 1

Prepare a pot of boiling water and a bowl of ice water

Ingredients

  • 2 Roma Tomato

Step 2

Cut a small X-mark on the bottom of each tomato. place in boiling water for about 1 minute. Just long enough for the skin to loosen, but not cook the tomato.
 

Step 3

Remove tomatoes from boiling water and submerge in ice water until cool. Peel off skin, deseed, and dice.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 slice Vidalia Onion, 1/4 inch thick, diced
  • 14 teaspoon Seasoning Salt, added to taste
  • 1 tablespoon Balsamic Vinegar
  • 1 teaspoon Fresh Basil
  • 2 tablespoons Parmigiano Reggiano Cheese, Freshly grated
  • 2 cloves Garlic, roasted and crushed
  • Ground Black Pepper, added to taste
  • 2 tablespoons Pecorino Romano Cheese, grated
  • 6 medium Shrimp, deshelled, deveined, and diced.

Step 4

In a medium bowl mix all ingredients (except bread) thoroughly.
 

Step 5

Let chill for 2+ hours.

Ingredients

  • 8 slices French Bread

Step 6

Place spoonful on slice of french bread. Serve cold or broiled in oven for 2 minutes.
