*Simple Basil Chicken with Goat Cheese

"Chicken... A staple in many kitchen...But sometimes, even the most tried and true chicken recipes get redundant or boring. Do I have a recipe for you!! You can take a few chicken breasts, and with only THREE main ingredients, have a meal "refined" enough for entertaining company, or as a quick and tasty meal that even kids will love!"

Directions

Ingredients

  • 4 Boneless Skinless Chicken Breasts
  • 4 ounces Goat Cheese, or seasoned cheese (I used goat cheese seasoned with Chive and Onions)
  • 5 leaves Fresh Basil, (LOVE having fresh herbs in my garden, so I can always have them on hand!)

Step 1

Slice the breasts open half way. Insert a couple slices of the goat cheese into the chicken breast. Lay 1-2 fresh basil leaves over the goat cheese. Close chicken breast back together so cheese and basil is adequately tucked inside.

Ingredients

  • Olive Oil
  • Salt & Pepper

Step 2

Place prepared chicken breasts in glass dish. Drizzle with Olive Oil and rub over tops of chicken breasts. Sprinkle breasts with Salt and Pepper.
 

Step 3

Cook at 350 degrees for about 1 hour to 1 1/2 hours until done. The flavor of the fresh basil is AMAZING! Sophisticated enough for adults, yet mild enough for the kiddos!
