Simple Marinated Salad

A good summer salad based on the recipe my mother had made for years. As usual, I had to embellish...



  • 1 Yellow Onion, french-sliced
  • 1 Cucumber, sliced into thin rounds using a mandolin
  • 1 Green Bell Pepper, diced 1/8", ribs and seeds removed
  • 1 pound Roma Tomato, cut into 1/2" pieces
  • 3 Carrots, thinly sliced using a mandolin
  • 3 Celery Ribs, thinly sliced using a mandolin

Step 1

Toss all the vegetable ingredients to combine.


  • 1 cup Salad Dressing, use an oil-and-vinegar type, whatever you like (italian, balsamic, raspberry; any good vinaigrette)

Step 2

Add salad dressing and stir to coat all vegetables. It's better not to add salt or pepper at this stage, but instead add it at serving time. Cover and refrigerate for at least one hour (longer is better).
