Simple Slow-Cooked Chicken

This is just a basic recipe for slow-cooked chicken, perfect for that day when you just have too much going on to cook a big meal. Just set it and forget it!



  • 1 Whole Chicken, skin removed to reduce fat content (optional)
  • 3 Carrots, cut into 1 inch pieces (cut the fat pieces in half lengthwise)
  • 3 cloves Garlic, sliced
  • 4 Celery Ribs, cut into 1 inch pieces
  • 12 teaspoon Kosher Salt
  • 12 Whole Black Peppercorns
  • 2 Dried Whole Bay Leaves
  • 12 cup White Vermouth
  • 1 quart Water
  • 2 Onions, cut into 8 pieces

Step 1

Add all ingredients to slow-cooker in order listed. Set to high, cover, and leave alone for at least 4 hours. It's done when the internal temperature of the chicken reaches 165 degrees F.

Step 2

Serve over rice, alongside a serving of pasta with butter or pesto sauce, or even with a potato side. This dish plays well with most anything you want to use.
