Simple Tomato Salad |

This is a quick and easy salad that can serve as a wonderful side item at dinnertime or even as a lunch all on it's own. Nice if you are counting calories, too.

Ingredients
Step 1
Place a lettuce leaf, positioned as if it were a cup, on each plate.

Step 2
Divide the diced cucumbers evenly among the four plates. Divide the quartered grape tomatoes likewise.

Add some of the salt and pepper to each plate (but not all of it). Put a quarter cup of the dressing evenly over each plate.

Step 4
Using a small disher or ice-cream scoop, put a scoop of the cottage cheese on top of each salad. Add remaining salt and pepper to each plate.

Step 5
You can garnish with a parsley sprig if you like. This is a very quick and easy dish that can add that little something extra to almost any meal.

Step 6
Variation: Replace the cottage cheese with some tuna salad to turn a great side dish into a fantastic lunch! Also: if you are counting calories, be sure to use low fat cottage cheese and low fat dressing! You can reduce salt as much as you like if you are watching sodium intake.
