Cooked in an iron skillet in the oven, this special dessert is one to keep secret from your cardiologist.
Directions |
Step 1
Preheat oven to 400 degrees.

Melt butter in 12-inch cast iron skillet.

Add blueberries and sugar. Cook gently until berries begin to soften. Add water, if necessary, if mixture seems too dry.

In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add milk and mix into wet dough.

Step 5
Spoon batter into fruit mixture. Drag batter through fruit but leave wide stripes of batter. Do not mix in.

Step 6
Bake until thick portions of the batter test clean when poked with a toothpick and the fruit mixture is bubbly around the edges, approximately 20 minutes.
