Combining tomato puree and ketchup gives these notoriously messy sandwiches the right balance of tang and sweetness.

Ingredients
Step 1
Heat the oil in a large skillet set over medium-high heat until shimmering. Add the onion and cook until soft and starting to brown, about 5 minutes.

Stir in the garlic and chili powder and cook for 1 minute.

Add the beef, brown sugar, salt and pepper. Reduce heat to medium and cook, breaking the meat into small pieces, until no longer pink, about 4 minutes.

Stir in the tomato puree, ketchup, and water. Bring to a simmer and cook until the mixture is slightly thickened, about 5 minutes. Season with additional salt and pepper to taste.

Serve on hamburger buns, about 1/2 cup of meat mixture per bun.
