Slow Cooker 3-Packet Pot Roast

Amazing flavor and so simple!

Note: Do not add any additional salt as the packets provide plenty. Original recipe used the whole packet of Italian dressing mix. I cut it to half a packet to reduce the sodium content.

Also manufacturers change how much is in a packet frequently. All dry mixes in this recipe are just the standard size packets. A little difference in weight will not matter.



  • 5 medium Carrot

Step 1

Wash carrots (or peel if desired). Cut them up into pieces about 2 inches long. Split any especially large carrots into halves or quarters lengthwise, too. Place into slow cooker.


  • 4 pounds Boneless Beef Chuck Roast, can go slightly smaller or larger

Step 2

If roast has a lot of extra fat, trim it away. Don't worry about getting it all just the easy to reach stuff. Place trimmed beef into slow cooker on top of carrots.


  • 1 packet Brown Gravy Mix, 0.87 oz, dry
  • 12 packet Good Seasons Italian Dressing Mix, 1/2 of a 0.7 oz packet, dry
  • 1 packet Ranch Dressing Mix, 1 oz, dry

Step 3

Mix the dried mixes together in a small bowl and sprinkle the mixture over the top of the meat. It will look like it's too much but is fine.


  • 12 cup Water

Step 4

Pour water around the meat.

Step 5

Cover and cook on High for 1 hour (this step is optional and meant to get the meat up to a safe temperature more quickly but can be skipped. Just increase the cooking time on Low by an additional hour or so). Then turn down to Low and cook for an additional 8-9 hours.

Step 6

Remove roast and carrots from the slow cooker. Loosely tent roast with foil.


  • 12 cup Water
  • 14 cup Cornstarch

Step 7

In a small cup, mix together cold water and corn starch to form a thickening slurry for the gravy.

Step 8

Pour liquid from slow cooker into a saucepan. Skim any excess fat from the top and heat over medium heat until at a simmer. Stir in the cornstarch and water slurry a little at a time until desired thickness. Note: You may or may not need all of the slurry or you may need to make more. Depends on how much liquid from the meat you wound up with and how thick you like the gravy.

Step 9

Slice or shred roast into serving pieces. Serve with carrots, gravy and some mashed potatoes.
