Slow Cooker Sausage And Tortellini Soup

Really fast to put together. The only prep is to brown your sausage.



  • 1 pound Sweet Italian Sausage

Step 1

If not using bulk sausage, remove sausage from casing. Brown sausage until cooked through breaking into pieces as it cooks. Remove to paper towel lined plate to drain.


  • 2 cans Italian Style Diced Tomatoes, 14.5 ounces each, drained
  • 4 cups Chicken Broth
  • 1 package Fresh Baby Spinach, 5 ounces
  • 19 ounces Frozen Cheese Tortellini
  • 8 ounces Cream Cheese, can use reduced fat cream cheese
  • Black Pepper, just a sprinkle or to taste

Step 2

Add all remaining ingredients, cutting the cream cheese into smaller chunks as you add it. Stir. Cover and cook on Low for 4-6 hours. Depends on your slow cooker. Mine was done in 4-4.5 hours.

Step 3

NOTE: Keep an eye on your tortellini, it may be done sooner. You don't want to cook it too long or the tortellini will fall apart. If too soupy, remove lid for the last half hour or so of cooking.
