Smoked Chicken Stock

After smoking chicken for enchiladas or some other dish, immediately make use of the chicken carcass parts to make a smoky and spicy stock for use in other recipes.



  • 2 Broiler Chickens, bones and carcass from smoked chicken.

Step 1

Smoke chicken per my Smoked Chicken recipe. Remove meat for use in other recipes. Place the carcass parts, skin, bones in stock pot.


  • 8 cups Water

Step 2

Cover with water. Many stocks add additional seasoning. In this case, there is a lot of seasoning already on the chicken.

Step 3

Bring to boil. Reduce heat to low simmer for one hour. Remove from heat. Strain bones and other parts from stock. Return stray bits of chicken to stock.
