Smokey Blueberry Baked Beans |

It's serviceberry (saskatoons in Canada) season, so I am using those instead.

Ingredients
Step 1
Soak the beans overnight in cold water. Drain the liquid. Put the beans in a pot and cover with fresh, cold liquid. Simmer the beans on the stovetop until barely tender (1-2 hours). Drain and reserve the liquid.

Preheat oven to 350 degrees.

Arrange the beans in a 2-quart pot or casserole dish, placing a portion of the beans in the bottom and layering them with bacon, blueberries, and onion.

In a saucepan, combine the molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over the beans. pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.

Step 5
Bake the beans in the 325-degree oven until they are very tender (3-4 hours). Remove the lid about halfway through cooking and add more liquid if necessary to prevent the beans from getting too dry.
