Smothered Chicken With Brown Rice

  • 4 slices Bacon, chopped
  • 4 small Boneless Skinless Chicken Breast, 1 lb

Step 1

Cook bacon in skillet until crisp. Remove from skillet, drain on paper towels. Drain drippings. Add chicken to skillet. Cook 5-6 minutes on each side until brown on each side and cooked through. Transfer chicken to plate, cover to keep warm.


  • 1 pound Carrot, thinly sliced
  • 1 Onion, chopped
  • 2 cups Chicken Broth, divided
  • 4 ounces Cream Cheese, cubed
  • 3 cups Brown Rice, prepared as directed and kept warm

Step 2

Add vegetables and 1 cup broth to skillet; cover and simmer 10 min or until vegetables are tender. Stir in remaining 1 cup broth and cream cheese. Cook 2 minutes or until cheese is melted and sauce is thickened, stirring frequently. Return chicken to skillet, cook 2 minutes or until heated through. Spoon rice onto plate, top with chicken, veg, sauce, and bacon.
