Southwest Turkey, Vegetable And Rice Skillet

Directions

Ingredients

  • 2 cups Brown Rice

Step 1

Cook rice in cooker. Set aside.
 

Step 2

Heat a large skillet over medium-high heat.

Ingredients

  • 1 pound Lean Ground Turkey
  • Salt and Pepper
  • 1 teaspoon Chili Powder
  • 12 teaspoon Cumin

Step 3

When the skillet is hot, add a couple teaspoons of oil or spray the skillet generously with oil. Add the ground turkey to the skillet and crumble it with a wooden spoon. Season with salt, pepper, chili powder and cumin.

Ingredients

  • 12 Yellow Onion, diced
  • 1 clove Garlic, minced

Step 4

When the turkey is almost cooked through add in the onion and garlic, cook for about 2 minutes.

Ingredients

  • 4 ounces Diced Ortega Chilis
  • 2 Zucchini, diced (about 2 cups)

Step 5

Add in the can of green chiles and the zucchini and cook for another minute.

Ingredients

  • 12 cup Corn, fresh or frozen
  • 1 Tomato, diced

Step 6

Add in the cooked brown rice, corn and tomato and stir everything together.

Ingredients

  • 12 cup Shredded Monterey Jack Cheese
  • 12 cup Shredded Sharp Cheddar Cheese
  • 12 cup Plain Non-fat Greek Yogurt

Step 7

When the mixture is heated through, add the cheeses and stir until melted. Remove from heat. Stir in greek yogurt until everything is combined. Serve immediately.
