Spaghetti Alla Carbonara

A quick and easy pasta dish.

Directions

 

Step 1

Put a large pan of water on to boil for the pasta.

Ingredients

  • 12 pound Bacon, chopped

Step 2

In another large pan that will fit the pasta later, over medium heat, cook the bacon until crispy, about 6 minutes.

Ingredients

  • 1 tablespoon Garlic, chopped
  • Freshly Ground Pepper

Step 3

Remove the bacon and drain on paper towels. Pour off all of the oil except for 3 tablespoons. Add the garlic. Season with black pepper. Saute for 30 seconds. Take the pan off the heat.

  • 4 large Eggs
  • 12 cup Grated Parmesan Cheese
  • 14 cup Heavy Cream
  • Salt

Step 4

In a bowl, beat together the eggs, Parmesan, cream, and salt.

Ingredients

  • 1 pound Spaghetti

Step 5

Cook the pasta according to the packet instructions, start checking it 2 minutes before end of the recommended cooking time. When the pasta is al dente, remove approximately 1/2 cup of the pasta water before draining.
 

Step 6

Put the pan back on the heat and add the bacon and drained pasta, tossing well to coat.
 

Step 7

Take the pan off the heat again and add the eggs and cheese mixture, swiftly tossing everything to mix but do not scramble . Thin with pasta water, if needed.

Ingredients

  • 1 tablespoon Fresh Parsley, chopped

Step 8

Grind over some more pepper and garnish with parsley.
