Ingredients

  • 3 6 Inch Corn Tortillas, cut into thin strips
  • 1 tablespoon Vegetable Oil

Step 1

Preheat oven to 450. Toss tortilla strips and vegetable oil in large bowl to coat. Transfer strips to baking sheet. Bake until crisp, stirring occasionally, about 15 minutes.

Ingredients

  • 6 cups Chicken Broth
  • 12 teaspoon Ground Cumin
  • 14 teaspoon Cayenne Pepper
  • 12 ounces Fresh Spinach

Step 2

Bring broth, cumin and cayenne to simmer in a heavy large saucepan over medium heat. Add spinach and cook until wilted but still bright green, about 4 minutes.

Ingredients

  • 13 cup Fresh Cilantro, chopped
  • 4 tablespoons Fresh Lime Juice

Step 3

Add cilantro and lime juice. Season to taste with salt and pepper. Ladle soup into bowls and top with tortilla strips.
