Spinach Chicken Parmesan

Spinach Chicken Parmesan

Directions

 

Step 1

Preheat oven to 350 degrees.

Ingredients

  • 13 cup Grated Parmesan Cheese
  • 14 teaspoon Italian Seasoning
  • 6 Chicken Breasts, bone/skinless

Step 2

Combine cheese and seasoning. Roll chicken pieces in cheese mixture to coat lightly. Set remaining cheese mixture aside. Arrange coated chicken pieces in an 8x8x2 baking dish.

Ingredients

  • 14 cup Green Onion, chopped
  • 1 tablespoon Butter
  • 1 tablespoon Flour
  • 12 cup Skim Milk

Step 3

Saute green onions in butter until tender. Stir in flour, then add milk all at once. Simmer, stirring, until bubbly.

Ingredients

  • 10 ounces Frozen Chopped Spinach, thawed & drained
  • 1 tablespoon Pimento Peppers, chopped

Step 4

Stir in drained spinach and pimento. Spoon spinach mixture over chicken and sprinkle with remaining cheese mixture.
 

Step 5

Bake uncovered for 30-35 minutes or until tender and chicken juices run clear.
