Spinach Lentil Soup

Easy, hearty, and delicious soup for those days when you just don't feel like doing anything fancy, but still want a good meal.

Directions

Ingredients

  • 1 large Chopped Onion
  • 1 tablespoon Olive Oil
  • 1 cup Frozen Sliced Carrots
  • 1 12 cups Dried Lentils
  • 1 teaspoon Ground Cumin
  • 34 teaspoon Salt
  • 1 jar Salsa
  • 6 cups Chicken Stock

Step 1

In a large pot, saute onion in oil until tender. Add the water, carrots, salsa, lentils, cumin and salt. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until lentils are tender.

Ingredients

  • 1 package Spinach
  • 12 cup Fresh Cilantro

Step 2

Stir in spinach; simmer 5-10 minutes longer or until spinach is wilted. Top with cilantro.
