A very quick hardy soup for these cold nights.

Directions

Ingredients

  • 1 tablespoon Olive Oil, to control foaming
  • 1 Onion, diced
  • 2 Carrots, diced
  • 2 Celery Stalks, diced

Step 1

Heat the oil in your pressure cooker and stir in the onion, carrot and celery.

Ingredients

  • 4 cups Low Sodium Chicken Broth
  • 4 cups Water
  • 1 pound Ham, chopped
  • 1 pound Green Split Peas, rinsed and picked over
  • 1 12 teaspoons Dried Thyme
  • 2 Dried Whole Bay Leaves

Step 2

Add the broth, water and the rest of the ingredients. Lock the lid in place. Over high heat bring to pressure. Reduce the heat to just enough to maintain high pressure and cook 20 minutes. Turn off the heat and allow the pressure to come down naturally. Remove the bay leaves. Stir well to blend in the peas on the bottom.
