Steamed Salmon & Asparagus in Parchment

Directions

Ingredients

  • 8 Parchment Paper, 8 pieces

Step 1

Heat oven to 400 degrees. Place two parchment sheets on 2 baking sheets.

Ingredients

  • 1 12 pounds Red Potato, sliced about 1/4 in thick

Step 2

Divide the potatoes evenly among the four sheets.

Ingredients

  • 4 Salmon Fillets, 6-oz size

Step 3

Rinse the fish fillets and pat dry with paper towels. Place the fillets on top of the potatoes.

Ingredients

  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoons Fresh Tarragon, chopped
  • 4 Scallions, trimmed, cut into 1-inch pieces
  • 1 pound Asparagus, trimmed and cut into 1-inch pieces
  • 1 tablespoon Olive Oil

Step 4

Season with salt and pepper. Add the tarragon, scallions, and asparagus. Drizzle with the oil.
 

Step 5

Top with 4 more parchment sheets and fold edges several times to seal. Bake 25 minutes. Substitute salmon with tuna, halibut, or cod.
