Sticky Soy Pork With Watermelon

A sticky treat for two, these pork skewers aren't too heavy thanks to the watermelon

Directions

Ingredients

  • 350 grams Pork Tenderloin
  • 3 tablespoons Soy Sauce, with a little sugar

Step 1

Heat the grill to medium-high. Toss the pork with the soy sauce in a bowl then thread onto four skewers. Grill, turning and brushing with any leftover soy sauce until the meat is just cooked through, browned and sticky.

Ingredients

  • 1 teaspoon Sesame Oil
  • 1 Garlic Clove, crushed
  • 3 tablespoons Lime Juice
  • 1 tablespoon Golden Caster Sugar
  • 800 grams Watermelon, wedges
  • handful Fresh Coriander, roughly chopped
  • 4 Spring Onions, shredded
  • 1 teaspoon Sesame Seeds

Step 2

Meanwhile, mix the sesame oil, garlic, lime juice and sugar then season with salt. Peel then thinly slice the watermelon. Toss the melon and coriander into the dressing and leave for 5 minutes to steep. Serve with the pork and its sticky juices, scattered with the spring onions and sesame seeds.
