Strawberry-Mint Soup

  • 1 pint Fresh Strawberries, chilled
  • 9 Fresh Mint Leaves
  • 2 tablespoons Orange Juice

Step 1

Reserve 4 large fresh strawberries. Blend remaining fresh strawberries with 5 mint leaves and orange juice until completely smooth. Thinly slice reserved berries.


  • 1 pint Frozen Strawberries

Step 2

Run frozen strawberries through a juicer using blank instead of screen.


  • 1 tablespoon Grated Coconut, (optional)

Step 3

To serve, ladle strawberry-mint soup into 1 or 2 bowls; place a scoop of strawberry sherbet in center. Garnish with strawberry slices and mint leaves. Sprinkle with coconut. Serves 2.
