String Beans and Pancetta

Directions

 

Step 1

Thaw and drain frozen string beans. Or use fresh cleaned string beans.

Ingredients

  • 1 12 cups Onion, sliced thin
  • 6 strips Bacon, or salt pork, cut into small bits
  • 1 cup Pancetta, chopped
  • 3 tablespoons Olive Oil
  • 2 pinches Ground Black Pepper
  • 2 pinches Sea Salt
  • 4 tablespoons Butter
  • 5 cloves Garlic, smashed

Step 2

On low heat melt butter and warm olive oil, add onion, garlic, salt, pepper, cut salt pork, pancetta and bacon. Cook on low flame until onion is clear and garlic is soft. Pork should be getting slightly crispy.

Ingredients

  • 12 cup Red Bell Pepper, sliced thin (optional)
  • 12 cup Raw Sliced Almonds, (optional)
  • 1 pinch Greek Seasoning, (optional)

Step 3

Now is the time to add the optional ingredients, but unless you like these items, or are not sure, don't add.

Ingredients

  • 5 cups Long String Beans

Step 4

Add the string beans. Toss well in the pan and cover, cook on low heat 15 minutes. Then uncover, toss, cover and cook an additonal 15 minutes. If using fresh string beans cook 20 minutes first , then uncover, toss and cook an additonal 20 minutes.
