Stuffed Mushrooms Parmesan

  • 12 large Fresh Mushrooms

Step 1

Remove stems finely chop and reserve.


  • 1 medium Onion, finely chopped
  • 12 cup Pepperoni, diced
  • 14 cup Green Pepper, finely chopped
  • 1 clove Garlic, minced
  • 3 tablespoons Butter

Step 2

Melt butter in skillet. add onion pepperoni, green pepper, garlic & stems. cook over medium heat until tender but not brown. remove from heat.


  • 3 tablespoons Fresh Parsley, snipped
  • 12 teaspoon Seasoned Salt
  • 14 cup Grated Parmesan Cheese
  • 1 dash Pepper
  • 14 teaspoon Dried Oregano
  • 13 cup Chicken Broth
  • 12 Saltine Crackers, crushed

Step 3

Add cracker crumbs, parmesan, parsley,salt, oregano & pepper. mix well. stir in broth.

Step 4

Spoon stuffing into mushroom caps. lace caps in baking pan. fill pan with 1/4" water. bake uncovered 25-30 minutes.
