Stuffed Sweet Potatoes

Sweet Potatoes stuffed with Burrito-Bowl-mix



  • 5 pieces Sweet Potato

Step 1

Preheat the oven to 200°C. Scrub your potatoes and prick them all over with a fork or knife. Line a baking tray with aluminum foil or parchment paper and place potatoes on tray. Bake for 45 minutes until they’re tender and soft.

Step 2

Store whole cooked potatoes in an airtight container in the fridge. When ready to eat, slice sweet potatoes in half and mush the flesh up with a fork. This will create space for your toppings.


  • 3 cans Black Beans
  • 450 grams Corn
  • 3 handfuls Baby Spinach
  • 2 handfuls Fresh Cilantro
  • Salt and Pepper

Step 3

Load sweet potatoes with the black bean and corn mixture (see directions for the Lunch: Quinoa Burrito Bowls)


  • Salsa
  • 5 small Avocado

Step 4

Add salsa, diced avocado.
