*Summer Veggie Casserole

Step 1

Preheat oven to 350 degrees.


  • 5 Tomatoes, cut vertically
  • 3 medium Zucchini, cut vertically
  • 1 Red Onion, cut vertically
  • 3 Green Bell Peppers, cut into thick strips
  • 2 packages Mozzarella Cheese
  • 2 dashes Black Pepper
  • 5 Mrs. Dash Garlic & Herbs, generous dashes

Step 2

In a greased 9x13 pan, layer vegetables in this order: zucchini, tomatoes, green pepper strips, punched out onion rings. Make sure the vegetable pieces are overlapped. Sprinkle half the pepper and the Mrs. Dash seasonings. Spread 1 package of the mozzarella cheese on top. Repeat to make a second layer.

Step 3

Bake for about 30 minutes or until the cheese is melted. Let stand for 5-10 minutes before serving.
