Directions

 

Step 1

preheat oven to 350. Spray 9x9 baking dish with cooking spray.

Ingredients

  • 1 pound Ground Beef

Step 2

brown hamburger & drain

Ingredients

  • 1 package Taco Seasoning
  • 12 ounces Salsa

Step 3

Add taco seasoning and 2/3 cup water. Simmer for 10 minutes. Remove from heat. Stir in 1 cup salsa.

Ingredients

  • 8 Flour Tortillas, 6 inch

Step 4

Arrange 4 tortillas in the bottom and up the sides of the baking dish. (Tortillas will overlap on bottom but not all of the sides need to be covered.)

Ingredients

  • 2 cups Colby-Jack Cheese, Shredded
  • 1 Green Onion, sliced

Step 5

Spoon meat mixture evenly over tortillas. Sprinkle with 1 cup of cheese and 1/2 of the onion.
 

Step 6

Top with remaining 4 tortillas, overlapping slightly to create a scalloped edge effect. Press tortillas down over filling.
 

Step 7

Spread remaining salsa over tortillas. Sprinkle with remaining cheese and onion.
 

Step 8

Bake 30 minutes. Let stand 5 minutes before serving.

  • Tomato
  • Sour Cream

Step 9

Garnish with lettuce, tomato, and sour cream.
 

Step 10

To Freeze: prepare steps 2-7 in a freezer-oven safe pan (or cover a pan with foil, freeze & remove pan) Serving Day: Thaw (place foil back into pan before thawing). Bake at 350 for 30 minutes and follow step 9
