Some pralines are sugary but these are creamy and big, Texas style.

Ingredients
Step 1
Combine sugar, half and half, corn syrup and butter in 3 qt heavy saucepan. Stir to combine; bring to boil over medium-high heat; then reduce heat to medium-low, stirring occasionally to prevent scorching. Cook to the soft ball stage (238 F). Remove from heat and cool to lukewarm (110 F) with stirring.

Add vanilla; beat until mixture changes color and begins to thicken.

Step 3
Quickly pour or dip with large spoon onto 2 waxed paper-lined baking sheets, making circles about 3 1/2 inches in diameter; allow 6 to a baking sheet.

If mixture sets too fast, add 1 tsp or more hot water until patties again will spread when poured. Sprinkle 1 tsp nuts or about 3 pecan halves over each. Makes 12 pralines, or 1 3/4 pounds.
