Thai Chicken Curry

Quick, easy, delicious curry dish that anyone can make. People who have never had curry will love it. And a bonus is that it is lactose free :)

Directions

Ingredients

  • 1 tablespoon Olive Oil
  • 12 small White Onion, Diced into small pieces
  • 2 cloves Garlic, Crushed

Step 1

Add olive oil, onion and garlic to a large sautee pan and cook until onions are turning brown.

Ingredients

  • 2 tablespoons Flour
  • 2 tablespoons Curry Powder
  • 12 teaspoon Cayenne Pepper

Step 2

Mix flour, curry powder and cayenne pepper together. If you don't like spicy food then leave out the cayenne pepper. Add this mixture to sautee pan.

Ingredients

  • 1 can Coconut Milk, Should be about 14 ounces.

Step 3

Stir well and add the coconut milk. If you want it thicker then add less coconut milk.

  • 2 tablespoons Apricot Jam

Step 4

Stir in apricot jam until dissolved.

Ingredients

  • 12 Rotisserie Chicken, After buying at the grocery store take it home and immediately pull the meat off and shred it. It can stay in the refrigerator for many days. I use about half of the white meat in this recipe.

Step 5

Add chicken and cook until it is warmed throughout.

Step 6

Serve on top of rice.
